MATCHA MUFFINS 1st bowl-2/3 c. soymilk-1 tbsp flax powder-2 tbsp lemon juice-1 tsp vanilla extract
3rd largest mixing bowl-1/4 c. coconut oil-1/2 c. maple syrup-1/2 banana
2nd bowl-1 3/4 c. whole wheat flour-2 tsp. baking powder-1/2 tsp sea salt-2 tsp matcha powder
375 oven. 1st bowl- Combine milk, flax, lemon juice and vanilla. Whisk and let sit for 10 mins. 2nd bowl-Combine flour, baking powder, and salt and then sift in the matcha powder. 3rd bowl-melt coconut oil and add maple syrup. Add 1/2 banana. Pour liquid mixture (1st bowl) into 3rd bowl-mash and stir together. Fold in bowl of dry ingredients (2nd bowl) and do not over-mix. Spoon into lined muffin pans about 2/3 full and bake 20 minutes or before edges start to turn brown. -Cynthia
